This is the common problem that nokia lumia 800
The 'day off' issue with birthdays is an issue with Windows Live, pretty much the same as having double entries in the Birthday Calendar.
The solution to this is to goto calendar.live.com, select and remove the birthday calendar. Now sync your LiveID on the Lumia to remove the calendar from the Lumia (in Settings/email+accounts press and hold the live ID, then select Synchronize). You then create a new Calendar by selecting New>Birthday Calendar on calendar.live.com.
This will create a new calendar which will then populate correctly and will be on your Lumia on the next synchronization.
